When we visit Casa Vieja Lodge in Guatemala, the sailfish are our primary target, but the most important catch of the day may be a morning mahi mahi (AKA “dolphin” or “dorado). The boats have kitchens, which mean that a fresh mahi sandwich is possible if you do your job. Otherwise you’re stuck with hamburgers or chicken, which I’m sure are fine, albeit not truly in the spirit of the occasion.
