After we got the meat sweats from devouring a huge tray of Palmira Barbecue, chef Hector Garate sat down with us to explain more about his passion and his craft. I was pissed off that I didn’t record the entire conversation, but made the best of it by cornering him for at least a few questions in front of his smoker between customers. Please excuse the background noise – between an industrial air-conditioner and other sounds of the city, he had to talk loudly to be heard, but I guarantee you it’ll pay off to listen carefully. Even better, when he opens his new Charleston restaurant you need to be first in line.
